Hello!
I have recently started a new job where bringing cakes into the office is most welcome (finally) so I've been practicing new recipes on my colleagues. One of my colleagues can't eat eggs (that is all he can't eat; intolerance or allergy I'm not sure...) and I'd like to have a crack at some recipes for biscuits or cakes without any. I've been on the Google and I've found a couple of recipes for plain sponges. I've also found a list of alternatives, including half a banana or a tub of Greek yoghurt. If anyone has any tips on alternatives and any recipes which don't call for them at all, I'd be really grateful! Thanks Smile

Bananas work really well, especially with muffin type things. If you are adapting a recipe, I find you need to add a little extra baking powder if you are replacing an egg with banana.

You can also buy egg replacer (one tsp plus some water = 1 egg) but I sometimes feel it can be a bit chemically tasting.

Otherwise you can look for recipes that don't naturally have eggs - a lot of flapjacks, Anzac biscuits (a family favourite of ours).

I have loads of recipes (DD2 is allergic to dairy and egg), I'll see if I can dig out a few links for you.

Thank you all so much, this is very helpful. Vvviola I had no idea about the egg replacement so that's really interesting; if you say bananas work I think I'll start there. Anzac biscuits look delicious as well as being egg free...I'm sure my grandma used to make something similar. Will be giving them a try!

I thought about avocado recipes as I love the stuff but it seems to be going down badly on the last couple episodes of Masterchef and I am easily led...Hobnobs look great, thanks Onykahonie! I also have ingredients for lemon and ginger shortbread on my shopping list for this weekend now...
