Gluten-free cake - can I just use a normal recipe and substitute the flour/baking powder with GF alternatives?

Any other tips? I have rice flour, gluten-free flour and gluten-free baking powder. And ground almonds.

GF flour is minging in cakes. Use ground almonds instead

Yes- which gf flour is it? Add a bit more liquid (I use milk), some say how much on the bag. Ground almonds are good in anything that should be moist, like brownies, crumble, plum cake. Rice flour is trickier and I would follow a recipe specifically for rice flour.

Nigellas flourless brownies are great, and a Victoria sandwich with doves farm sr flour and a bit of extra milk always works well for me.

In the past I've used normal recipe just gf flour.
I think gf cakes are yummy - very little difference compared to normal flour.
Ground almonds is an option, but nowt wrong with something like Dove gf.
Bread is another matter. The one gf food I don't eat DS's leftovers.

Problem is I am not sure the ground almonds I have are GF (just bog-standard pack and I think it may say on the back, traces of egg/flour etc on it). I am not intolerant but have a friend coming for lunch tomorrow who is.

The recipe I was going to adapt is an apple and cinnamon cake from A Girl Called Jack. Hopefully the apples will add moisture but can add milk if needed.

The last time she came for lunch, I made the most disastrous banana loaf which looked flat as a pancake and tasted of bicarbonate of soda (even though I followed the recipe to the last letter!).

I buy supermarket ground almonds and have never had a reaction. Half almonds and half gf flour would be nice in an apple cake.

I use Doves Farm GF SR flour, and its works fine as a straight sub.

And my gf cakes (not that I make any other sort as I'm not making things I can't eat) are much admired by others even if they don't know they are gf

Doves farm have a free recipe book you can get. Send them a SAE and you get it in a few days. My mum makes amazing cakes with it.
