Can anyone help, I've lost my magazine and there's a really good recipe in there for Spinach Rice, which I've bought all the ingredients for, but now can't find the magazine!

The recipe isn't on the website yet.

I'd be really grateful if someone has it. Thanks

Your post made me unearth my magazine only to find it has no pages 1-36. My special subscriber issue starts with pages 36 to 67 and then repeats itself. So, sorry I can't help with your recipe but I am about to email them to moan! Thanks Grin.

100ml Virgin olive oil.
1 onion finely chopped
500g baby spinach leaves
Dill chopped
300g long grain rice
Juice 1 or 2 lemons

Heat oil and cook onions gently, (do not colour)
Add spinach and half dill, cook on high heat until wilted down and liquid evaporated.
Stir in rice add 600 ml water, bring to boil.
Turn heat down to simmer cover with tight fitting kid
Cook for 25-30 mins until rice has absorbed liquid ( give it a stir after 15 minutes) adding more water if necessary.
Stir in remaining dill, season and squeeze lemon to taste.

And Starlings that's not good, I too subscribe, but my batch was ok.

Hope it's yum after hunting the recipe down!
