A bit of a pastry virgin, so advice needed

I am away to a holiday home in my pil village (they can't cope with us all staying anymore0. Anyway, have volunteered to do a meal for the whole family on Sunday.
It seemed a good idea at the time as I love cooking, but its going to be a bit of a faf getting ingredients enroute.
I know you can freeze pastry, could I actually freeze it in the tartlet tins, and defrost there and cook/add filling. The filling is going to be balsamic red onions mixture with a slice of goats cheese on top.

I freeze uncooked mince pies at christmas. Defrost them and cook them. They're fine.

yes, that would be fine. Also, I have done a similar thing before with shop-bought frozen puff pastry - just roll it out when you get there, cut into squares of the desired size, bake, and then top with your balsamic onions and goats cheese. Might be easier than having to take tartlet tins with you

Thanks every one, have been packing the car all night, as well as making pastry, as we are leaving at 4 or 5am tomorrow.
