omelette using only egg whites.

I've just started a diet and one of the suppers is an omelette using only egg whites. I presume it's healthier but as it uses 4 eggs I'm going to be left with 4 egg yolks. What can I do with them? I don't want to make lemon curd and ruin my diet before I've even started!!

I use the egg yolks to make my son's scrambled egg more calorific as he's tiny. You can freeze them as well for when you might need a glaze for something. Other than that I make cookies but not v healthy!

It's not healthier to just eat egg whites. Most of the nutrition in an egg is in the yolk. Yes there is some fat but there are lots of other great things going on... vitamin A, calcium, iron.... whereas egg-white is just albumen i.e. protein a little potassium and not much else. It's 17 calories in the egg white vs 70-ish in a whole egg. Instead of 4 whites (which is going to taste bloody boring) have 1 whole poached egg and enjoy.... :)

I agree it doesn't sound very tasty! It's also got 2 thin slices of sliced turkey and green pepper, accompanied by a salad.Could I just do it with say 2 whole eggs?

You can buy (pourable) egg whites in a carton - they sell it at waitrose, and in some sainsburys stores, I think. Waitrose stock a brand called "two chicks" - it's in the chilled section. It's actually quite reasonably priced and lasts a while in the fridge. If you don't think you'll use it all in time, you could fill an ice cube tray with it, then use cubes as needed.

(but agree with PP above - yolk is the most nutritious part of the egg)
