Lemon puddings/desserts

I am cooking for my Mother on Mothering Sunday and want to make a lemon-y pudding, as that is her favourite. I need inspiration: none of the usual ones have grabbed me and it needs to be easy and fool-proof as not only are we travelling that morning to her but I have four small children and get distracted very easily.

Open to hot or cold, just seeking something tasty!
