Cheese and potato pie

Does anyone have a good recipe they would like to share? Have been googling this morning but there are so many different recipes - cooking onion/potato - putting in raw. With creme fraiche- without! Would ideally like a recipe that's foolproof if you lovely lot have one. Thanks ever so much Wink

So you want an actual pastry cheese and potato pie? I make something I call cheese and potato pie which is a version of Dauphinois potatoes.

Hi Lagoonablue. Yes- exactly that. I am just really stuck with the amount of different recipes on google. I thought someone may have a recipe that their parents/grandparents used. Such a fuss for a blinking pie Grin

It's not a pie though. I only call it that. It is parboiled very thinly sliced potato, layered with strong cheddar and thinly sliced onion or spring onion. Then a lot of cream pored over and baked for 30 mins. Sooo delicious. Actually I did put it on a pastry case once but used less cream and added an egg to bind it all. That was also nice.

I love the combination of cheese, potato and onion.

Lagoonablue sorry if it's a daft question but do you parboil the potatoes before or after slicing?

Before. Really thinly. Simmer for 5 mins. I don't always put it on pastry as nice without but if you use a pastry case bake it blind a bit first so it doesn't get soggy.
