Impressive but easy lamb recipes for Mother's Day please

Mum (plus family - 8 total) coming to me for Mother's Day lunch. She's quite the discerning type so needs to be something cooked from scratch.

Have 2 small children so needs to be easy or something I can prepare the night before.

Slow roast Moroccan lamb shoulder. The recipe is on the BBC good food site. Serve with med veg couscous and pomegranite salad. Delish!!

Jamie Olivers slow roast shoulder of lamb is really tasty. I've served it with mash or dauphinoise and a selection of veg. Made a gravy with some of the juices, redcurrants jelly and a splash of red. You can prep the veg and poatoes the night before. The lamb needs no attention other than a small bit of prep before it is oven ready.

This is beautiful and very easy.

Lamb neck fillet is a beautiful cut of meat, and really good value. Remove the fat from the fillets before you cook it. I always cut into smallish pieces and it's fine to be creative with the ingredients. There's usually always something I don't have, or something extra I add just to get rid of it and it's fine.

Definitely dauphinoise potatoes with it. You can prep this the night before too and then just leave it in the oven. It's a lovely indulgence.

I love cauliflower cheese with lamb but that's probably too rich with the dauphinoise, so fresh peas, roast squash (chuck in with roast potatoes if you're doing them, but they only need half as long).

The Nigella pomegranate & mint lamb is fabulous, as is Ottolenghi's lamb shawarma, my kids love both.

tom kerridge has a recipe for lamb baked in bay - it looks absolutley amazing but havent tried it yet.
