carrot cake

Hi just wondering if anyone has a wonderful carrot cake recipe? It's DPs favourite and it's his birthday on Friday

The one on the BBC Good Food website is lovely, sorry I can't link as I'm on my phone but it's the one called yummy scrummy carrot cake.

i've made that one...the name makes me cringe though. yummy fucking scrummy....are we all 3 and a half??

it's a light and spongey one, and keeps really well

I often do a more cake like one with raisins and walnuts in, but I know some folks think that is heresy.

I also use the good food one. Works every time.
