Cook it all up and then freeze in portions for using in pies and crumbles, or apple jam.

Spicy apple butter if you have some jars to put it in.
Apple tarts and then freeze them.

we get through stewed apple by the gallon so I tend to make that - also freezes well.

Or I peel, core, slice and freeze in bags for when I'm feeling more creative.

this cake looks lovely I'm sure you could make it withcooking apples with a bit of adaptation nigel slater deep apple cake

Apple sauce

Peel a couple of apples and slice. Put into saucepan with a little water and plenty of sugar. simmer until it reaches desired consistency.

It can then be frozen and used when needed!
