The only way I can think that you could do it would be to make a kind of savoury custard with eggs as the thickening agent and add cheese to it.

I found that for pasta you can just stir cheddar into creme fraiche, but I then made it in oven as a pasta bake as I worried that heating sauce on hob could cause creme fraiche to split...

Mascarpone gently heated in the microwave with strong cheese ( I use parmesan) and a pinch of mustard powder works well

If you are going to be baking it, then mix grated cheese and a beaten egg into creme fraiche. If it is for a pouring sauce, leave out the egg and just heat gently.

i just warm a pot of single cream up and bung a load of grated cheese (and mustard/ black pepper to taste)
