Grin Is there anything I can buy to help me to do this? I'd most like some crinkly roast veg.

A julienne peeler for thin bits? A potato peeler to peel off long bits of, eg, courgette, carrot?
A spiralizer?

This is a julienne peeler

You slide it along carrots or courgettes or whatever and they turn into very thin strips.

I find it very satisfying.

My Mum used to do flowery carrots for the DC.

You cut or score several 'V's around the carrot , from top to bottom and then slice as usual.
