Left over roast pork - any ideas

Hi

Google has not inspired. Anyone got suggestions on what i can make to use up roast pork?

I usually slice it up into boxes, with the gravy, freeze it and use it for a quick midweek roast

make some giant yorkshires, do some veg, heat the pork in the gravy. Easypeasy!

Cat my slicing skills have never been that good! I have a pile of pork pieces - i think that explains the mental block.

Now Lolly that second recipe sounds like a plan - why did i never think of pasta bake?!

I would fry off some onion and finely diced carrot, add chopped pork, 5 spice, soy sauce, handful of peas and a load of noodles and finish with a bit of seasame oil.

I had some left over pork once - a bit dry. I chucked it in the food processor to chop it quite finely then stir fried it with some garlic, ginger, spring onions and a bit of chilli. Then kids and I ate it rolled up in lettuce leaves with a bit of hoisin sauce. Was delicious! (and very, very quick)

Make pork ragu in the slow cooker, or in oven. Add passata, herbs, red pepper, courgette, carrot, celery, onion etc etc

I was going to say sweet and sour pork too - if you have peppers or onion or carrots you can shred those and put them in. I also put in a tin of pineapple chunks, and make the sauce with ketchup, brown sugar and vinegar. Sometimes I throw in a bit of five spice or ginger.

Mince it. Mix it with breadcrumbs, egg, spices/herbs/mango chutney to taste. Shape into burgers and oven bake.
