Nice veggie recipe for friends?

I'm having some friends over for tea on tues. One of them is vegetarian and rather than just catering separately for her with something small, I thought I'd make something nice vegetarian for everyone. It doesn't have to be super fancy but I just wondered, any good vegetarian recipes for a dinner party for 6? I have no idea even where to look for recipes, I am such a dyed in the wool carnivore!!

This aubergine cassoulet recipe is very good as is JO's squash and spinach rotolo (sorry can't link more than one at a time for some reason)

I did a lovely mushroom dish with mash and green beans on NYE:

I tend to go simple and do a veggie chilli with all the dips and wraps, or a veggie jambalaya with quorn sausages and loads of spiced ( I add prawns if one friend is coming as she eats fish).

Thanks very much, I will look those up! Another friend doesn't like mushrooms Confused so the aubergine cassoulet, rotolo or veggie chilli sounding good...!!

this veggie shepherds pie is really gorgeous. Quite time consuming to prepare though (meaty shepherds pie takes me a while too though!)

We've been working on our veggie repertoire lately and have recently had a chilli made with black beans and sweet potato which was lovely and would make a great dish for a small crowd. Yesterday DP made mushroom and Stilton wellingtons which didn't take long and tasted impressive Smile

Ooh yum to both of those suggestions, chewbacca and slightly.,, this is going to be harder than I thought to choose! We really ought to be less reliant on meat and fish, so many delicious alternatives around. Thanks all!

I also stuff those long red peppers with feta, cherry toms, red onion and pesto and bake for about 30 mins. Serve with salad and nice bread. That always goes down really well.

I have a madhur jaffrey book with some gorgeous veggie curries in it- I think I've done a pea and potato one from it years ago! That's a great idea though tondelayo and squarehead - thank you!

Also my all time fave curry when I spent some time in India was chana masala (chick pea masala) and I've never tried to recreate it.... Maybe nows the time!

For a different take- caramelised onion and goats cheese tart and I love puy lentils cooked with fine diced vegetables as a contrast side

I love the JO rotolo and cook it quite often - but if you are feeding a crowd you can't beat a curry really...
