veggie lasagne help

I want to make a veggie lasagne to freeze and I need to use what I already have in - got lasagne sheets, passata, garlic, cheese etc but not sure if veg I have in is any good-

Carrots,
leeks,
spinach,
sweet potatoes

Would a combo of the above be edible? And if so, do I roast the veg then mix with cooked lentils? Or grate it up really small and mix with lentils then cook in dish? Confused!

Chop the carrots and sweet potatoes into small dice and roast. Meanwhile, fry up the chopped leeks with an onion and some garlic. Add a slug of red wine and some oregano. Add passata, wtaer and uncooked red lentils and cook until lentils soft. Add the roasted vege. Shred the spinanch and add that. Layer it up and top with cheese sauce/more cheese. Cook.
