3 course meal with NO Fats?

I'm cooking tomorrow night for family, one member is having investigations for stomach problems, and at the minute can't eat any fats, it leaves her in extreme pain. I want to include her as much as possible, and of course I can add oil/butter etc to the others meals. But bloody hell I'm struggling to think of anything!

Ceviche or would white fish have too much fat in it?
Vietnamese/thai salad - lots of shredded white cabbage, carrot & cucumber with a fish sauce dressing
Grilled chicken (or again is that too fatty?)
Mashed potato made with stock rather than butter/milk or made with skimmed milk
Caramelised oranges for pudding

I did a low fat meal recently.no real starter but had crudités with salsa and homemade garlic yoghurt dip.(0% fat yoghut plus garlic & lemon juice):. Then roast chicken (lemon inside) mash (added milk - no fat) and that red cabbage/apple dish % other veg - peas and broccoli. Then Greek 0% yoghurt with fresh pineapple after.

Homemade soup
Fish (eg turbot or skate ) poached in fish stock herbs etc served with selection of green vegetables and potatoes boulangerie with watercress sauce.
Mixed poached winter fruits, pear, dates, dried figs, apricots, apple.
Or grown up jelly with grapes.
