Vegetables in lasagne

I want to make a lasagne to freeze for my son, the recipe is just a basic bolognese type sauce. If I want to add courgettes, red onion and pepper do I roast these separately or add them in with/ before the mince?

I always add white onion, green pepper and mushrooms and I put them into the mince when cooking it.

Either.
(1) roast the veg and make separate layers with it
(2) saute the veg (at least the onion and pepper) and then add the mince.

Depends whether your DS likes veg or needs it a bit hidden. If you want it really hidden you can saute veg, add the tomatoes and blend it and then add that to the browned mince.

He was really good with veg but has started to push it away recently. I have some hidden veg sauce in the freezer so wanted to leave it in chunks to see if he will eat it this way.

Oh well in that case I'd use finely diced veg (carrot and celery are of course conventional in ragu as well) in with the meat. My DD was never a veg lover but would eat that sort of thing.
