Instead of pressure cooker....?

I really want to cook this rice but don't have a pressure cooker (nor have I ever used one so unfamiliar with them).

Can I just use a covered pan and hope for the best??

You can certainly make it without pressure cooker. Lenght of cooking will depend on type of rice used which should be preferably long grain.

It's important to "fry" the rice for a couple of minutes and I find it's best if the stock or water is hot when added.
Liquid is usually double amount of rice so for one cup rice, two cups hot stock
Have a look at cooking time on packet of rice as some cook quicker than others, may be between 15 to 22 minutes.

Bring to boil, lower heat to a simmer, cover and cook for time specified on packet. Avoid removing lid while cooking. (Timer is a good idea to avoid overcooking)

When done remove from heat and let stand covered for 8 to 10 minutes. Fluff up with a fork and serve.

Thanks thenumbereven, I normally cook rice in exactly the way you describe (those of you who claim you 'can't cook rice', take note!) but just wondered if this particular recipe required a pressure cooker in particular.
