Making soup with stir fry veg mix?

Does this sound like an awful idea - or a good one?

Got a big bag of stir fry veg mix, not going to use it for stir fry, hate to throw it away. Do you reckon it'll work as veg soup if I boil it in stock and blitz it? Pretty standard mix of cabbage and carrot and mushroom etc, with some bean sprouts. I could bung in a couple of potatoes as well to thicken it up.

You'll get some kind of soup, certainly. Probably end up as the ubiquitous 'golden vegetable'. Sweat the veg with a little butter to get some flavour out of it.

I'd do it in a light stock and add noodles. Keep the veg whole and not cook it for too long so it still has a bit of bite.

I'd also add stock- maybe a little coconut milk and some thai paste (red or green) if you have it!
