Freeze cooked peppers?

I am making stuffed peppers for dinner tomorrow night. Red peppers, stuffed with mince and topped with cheese. Once cooked, will it be possible to freeze leftovers? Would I then re-cook from frozen or defrost? I know the mince sauce would be ok, but would the peppers stay nice?

I think maybe just freeze the sauce and put it in a new fresh pepper next time - not a lot more work really.

Cooking one, then freezing it, then de-frosting it and cooking it again, that's asking a bit much of something which is mostly water to start with Smile!

Thanks, good point, I just over bought on the peppers though, so wanted to use them up.

I stuff and cook my peppers before freezing them.
I make sure they are thoroughly thawed and give them about half an hour in a medium oven to reheat and they are fab.
My favourite lunch atm.

I've frozen leftover stuffed peppers before. The texture isn't as good but they are okay
