Chinese hotpot

I treated myself to an electric hotpot with a split bowl after a recent trip to China and we are really enjoying the family together meal a couple of times a month. it's costing me lots in specialist food from the Chinese supermarket (and the petrol for the special trip) and I was wondering if anyone else does this and what things have cooked well?
I make my own mild and chilli stock; so far we have cooked sliced meats, Chinese leaf, pak choi, choi sum, golden mushroom, normal mushrooms, mooli, fish balls (how do you make these?) and pork dumplings. We tend to finish with rice noodles.
What does everyone else cook? Thanks in advance.

Thinly sliced meats (lamb, chicken or beef)
Cabbage, lettuce, leaf salads etc...
Tofu
Hard boiled quail eggs
Ocra
All types of mushrooms
You could use knorr stocks ...

Dipping sauces, satay sauce, sesame seeds, vinegar, special XO sauce etc ...

Raw prawns, crab sticks, cubed white fish, French beans, mange tout, udon noodles.
