I'vegot a jar of mince pie filling and LOTS of cooking apples......

Cut top off apples, core out the middle. Stuff full of mince meat, bake for however long an apple takes to bake (this is something my mum used to do - never done it myself!). For last few minutes, take top of apple off and top with some brown sugar and pop under the grill.

That sounds suitably simpleand delicious. I've only ever baked eating apples before. Will it be sweet enough for small and fussy palates I wonder?

I'm not keen on baking apples but I used to eat it when my mum made it so fingers crossed for you!

My Mum always stewed apples to add to her mincemeat (-so it was lovely and soft and not quite as rich) and then used it for her mince pie filling but pastry is probably not something you fancy doing without much energy!
