Has anyone ever made vegetarian sausages?

I bought some lovely smoked tofu sausages the other day but they were £3.29 for 4. I was wondering if anyone had ever made any at home?

Ooh I was just thinking about attempting to make veg sausages after reading the Sosmix thread.

Going to try those glamorgan sausages!

With great success, they were lovely, and you can chop and change the herbs and spices to get whatever type you want, there was a thread on the PPK forums that has a big list of flavours but I can't find it just now!

Thanks Cecy. Are white beans butter beans and is broth just stock or do they mean soup.Rude - what is the Sosmix thread?

Yeah I think I've used either butter beans or cannelini beans (butter beans would mash easier though!) and for the broth I use Marigold bouillon.

I tried, with a beany base and cheese and egg to bind. Tasted nice, but they kept falling apart and were nothing like sausages: I may as well have made them round.

I agree re: the Linda Mccartney ones: they are genuinely 'meaty' and remind me of cheap pork sausages of yore (not a bad thing). Also, they are vegan so my daughter will eat them!

Thanks Cecy. Comfort - I was wondering how easy it would be to make sausages which didn't fall apart. Fingers crossed I will try some and report back. Are you a Deliciously Ella fan?
