Eggs galore!

Our chickens are laying beautifully atm - we often get 3 or 4 eggs per day from 2 hens. Right now we have 15 eggs to use. What main meals can I do with them - don't want to do cakes etc as we still have loads of cakes & biscuits left from Christmas, plus we are broke & need main meal ideas.

I have thought of:

  • Egg & chips
  • Omelette
  • Kedgeree
  • Egg fried rice

What about a tortilla type thing, basically omelette with potatoes and whatever else you fancy. I usually use sliced new potatoes, peppers, onion, sweetcorn, cheese, sometimes ham/bacon and sometimes mushrooms. Good way of getting DD to eat extra veg in my experience.

Spanish tortilla.
Quiche.
Courgette bake (like quiche but without pastry base)

Boiled eggs, mushroom,bacon(or chicken liver)
Fry onion and garlic in small amount oil. Add bacon pieces or cut up chicken liver. Add sliced mushrooms,stir until cooked add a little bit of flour. If you have left over white wine add a splash(wine is optional)salt, pepper and add stock or water with a stock cube. Cook sauce for a few minutes, place egg halves into sauce and heat through. Sprinkle chopped parsley if you have it.

Boiled eggs, potato,peas:
Cook onion and garlic in a small amount of oil. Add a little bit of flour and cook stirring. Splash of white wine if you have it, salt and pepper, chopped parsley and frozen peas. While sauce simmers peel a potato, cut into small cubes and cook in hot oil. Drain and sprinkle with salt. Add cooked potato to sauce with the boiled egg halves. Adjust seasoning and heat through.

Huevos a la Flamenca:
Sautee garlic and onion. Add green or red pepper cut into small pieces and chopped chorizo. Add tomato puree and cook to reduce. Season with salt, pepper and if you like oregano or similar. Add some frozen peas. When sauce has thickened and peas are done add a few drops of vinegar. Stir to blend.
Break egg into a cup and slide carefully onto the sauce, repeat with remaining eggs. Lower heat, cover and let eggs set being careful to not overcook yolks.
Eggs can be fried and put on top of the sauce if you prefer.

Eggs,tomato slices, cheese
Put very small amount of oil on the bottom of large frying pan. Cook in it some sliced garlic if liked (optional). Place thick tomato slices to cover bottom of pan. Sprinkle with salt, pepper, oregano.Carefully break eggs onto hot tomato slices, top with grated cheese. Cover pan until eggs are set, being careful not to overcook yolk.

Boiled eggs, with stuffing, white sauce and cheese

Cut boiled eggs in half lenghtwise and carefully remove yolks.
In a little oil cook onion and garlic. Add mince and cook until browned. Season with salt and pepper and add a few spoonfuls of tomato puree. Cook for about ten minutes then add crumbled egg yolks. Mix well.
Fill egg halves with the mixture. Cover with white sauce (bechamel)sprinkle with cheese and place in oven until top is golden.
You may use leftover meat or chicken instead of the mince.
They are quite filling.

Curried eggs
Yorkshire pudding ~ toad in the hole
Pancakes with filling such as chicken in sauce, mince etc
Eggs baked with new potatoes and asparagus (HFW has a nice recipe for this)

This depends on the size of your freezer. Use the yolks to make ice cream.

Use the whites on top of a rice pudding or make meringues for Eton Mess. Meringues can be stored in an airtight tin.

I'm making a cheese and onion tart just now to use up 6 eggs. Will serve with homemade chips tossed in olive oil and baked for DH and a rocket salad. There's just the two of us so we eat half and I freeze the other half for a quick dinner another day. Cheap and easy!
