What to do with a roast chicken

Hello

I'm a reasonable(ish) cook but have never made a roast dinner before. Really want to try my hand at making roast chicken with the trimmings but there is only me and my LO who is almost 16 months. If i go ahead and make it what can i do with the leftovers and how long would they keep for?

I was thinking if i roasted a whole one i could maybe get some more meals out of it, but don't want to if it will simply mean too much food going to waste. Can it also be frozen and used later for cooking?

I think you can freeze and re-use, but worth checking on the food standards authority website.

you can have chicken sandwiches, make a chicken pue, chicken curry, chicken soup, cold chicken and salad, cold chicken and chips......

I make chicken tetrazzini- it's lush! Chicken stock with the bones and wings, chicken and veg soup, chicken curry, chicken (and mushroom/leek/veg) pie, chicken mayo sarnies... We buy a large one between DH, me and 2 year old DS it does 3-4 meals!!

I tend to plan to have Chicken Pot Pie after we have had roast chicken.
