So, if I make a chicken, leek & mushroom pie, what do I serve it with?

More veg?

Just eat the pie?

What does anyone else do?

Mashed sweet potato with that particular pie.
I don't generally double carb so no potatoes with pastry, I'd go for a green veg but you have that with the leeks.

Would really fancy new pots tbh.

I might just do a top & then won't feel too bad about pots as wellGrin

i don't have a pie dish.

Can I use a pyrex dish if making just a pastry lid?

Yes, that will work fine, I've no particular issue with double carbs btw, just feel I can get away with not peeling potatoes if I am doing pastry, it's a lazy thing.

I usually stick sweetcorn in the pie and serve with nothing else.

Would it work to make a full pie in a pyrex dish, or better to stick to top only?

Also, would a bottom need baking a bit before filling?

or is that just quiches?

Maybe best to keep it simple for the first go!!
