I've just started making soup as have stopped work so am mainly eating lunch at home alone.
There's a carrot & lentil one on the BBC that I've been making that is yummy and have tried a couple of Deliciously Ella ones (red pepper one and beetroot & potato) but am looking for some more inspiration.
I prefer veggie and only have a stick blender. Thanks MNers

Butternut squash is a lovely one.
The covent Garden soup book has some great recipes including veggie ones

Minted Green Pea and Ham (obviously leave out the ham if you're veggie) is very simple and a lovely flavour.

12oz potato - peeled and diced
1 onion, peeled and chopped
2 pints chicken or vegetable stock
12oz frozen peas
A handful of fresh mint leaves
8oz smoked bacon, ham or gammon, finely chopped
Oil and butter
Seasoning

  • Cook the ham pieces in a large saucepan, remove with a slotted spoon and set aside
  • Now heat a little oil and butter in the same pan, add the onions, potatoes and peas and 'sweat' on a low hit with the lid on for about 10 minutes
  • Add stock, seasoning and mint and cook for 15 - 20 minutes. The idea is to keep the peas nicely green
  • Blend until smooth, check the seasoning and then add the ham back to cook through for a few minutes at the end

I made this one.

I just cooked the bacon in with other vegs, and added 1 potato. When it was cooked, blitzed the whole lot so it was fairly smooth (as my daughter doesn't like bits!).

It was very nice. Could also add some kale as well. Lovely green colour.

Really nice and easy and a bit unusual is parsnip Apple and chestnut. Chop onions, celery, parsnips, one Bramley Apple and sauté in butter. Add water and veggie stick cube. Simmer for 30 mins then stir in half a tin of chestnut purée and blend. Serve with lots of freshly ground black pepper and double cream

Our current favourite is "honeyed carrot soup" from the bbc good food website. Tastes amazing! Grin

Easy soup is a stable in our house !

I made broccoli, ginger and spinach soup last week. It was quite tasty and really healthy!
Just google it, recipe I followed was part of a blog..

I also do a veg soup using two bags of M&S veg for casserole (little potatoes, carrots, turnip, etc..). I sauté them in butter for 10 mins, add boiling water and 2 knot stock pots. Blend. Yummy soup.

Another short cut soup is cabbage and leek bags from Tescos. Again I sauté in a bit of butter, with some chopped carrots. Add boiling water and knor stick pots and a few potatoes. Cook then blend.

There is a really easy and tasty Tomato soup on BBC good recipes. I add a fist of basil to it. Yum!

Should read 'knorr stock pots'.

I generally use veggie ones or sometimes the chicken ones.
