Sausage casserole for the slow cooker

What do you put in it to make it tasty? I have pork sausages, what else goes in?

I add sliced onion, passata, white beans (cannellini, butter beans or you can just use baked beans) sliced mushrooms, chilli and a big spoonful of smoky paprika.

Watching for more ideas!

I go for Veg stock, Tin of beans, Tin of tomatoes, chopped onion and a diced potatoe. And I have a tub of saus casserole slow cooker seasoning from tesco that I put in. But sometimes just substitute with garlic grabules, paprika and any other herbs I think will do Smile

If you do t brown your sausages first they look awful!

I toasted some cumin seeds and put them in my last sausage casserole. It was delicious!

Mine is a bit like DustWitch's - with cannellini beans, tomatoes, garlic, onion, wine or stock and a big dollop of pesto. Not necessarily slow cooker but always slow cooked.

Garlic, important, some chopped pancetta, white beans with tomatoes.
Tom Kerridge adds a topping of pesto and breadcrumbs, then grills it to get a crispy top!

Slightly off topic but I made an italianey sausage ragu with garlicky Italian sausages, fennel seeds, more garlic, red wine, tinned toms and a dash of balsamic vinegar. Cooked all day - delicious.

Remember if you are using wine boil it off before you put it in the slow cooker to get rid of the alcohol.

Sausages, diced carrots, cut up red onion, some gravy granules, veg and beef stock cube, potatoes peeled and cut in half. In slow cooker on low from 8.30am-4.30pm. Perfecto!

8 sausages, one chopped onion, chopped carrot, tin of baked beans, two small chopped up in to wedges sweet potatoes, 450 M&S of veg stock, random herbs from the cupboard. Does tea for me and DP and our lunches the next day.

They come out beautifully. I always buy butchers sausages though - not sure what supermarket sausages would be like!

We use frozen supermarket sausages and theyre always lovely. The do fall apart though when you touch them, no need for a fork, but that's slow cooking for you.

Sid I think we have the same slow cooker recipe book, do you skin the sausages and make them into balls first?

Op if you Google sausage and pumpkin casserole with sage you'll get a bbc recipe - I subsititute the pumpkin for butternut squash!

Agree with other posters I always brown the sausages or meatballs first!

This thread is awesome, from the suggestions I made a beaut of a casserole. Browned the sausages and an onion. Added to the slow cooker along with:
tin of chopped toms
tin of baked beans
glass of red wine
Dash of balsamic vinegar
Several drops of lea and perrins
chopped chilli
Chopped garlic
Sliced mushrooms
Sprinkle of chilli flakes
Smoked paprika
Mixed herbs

Cooked on high for 6 hours, added some gravy granules to thicken up the sauce and it was divine Grin
