We try to eat vegetarian main meals 2 times a week but I would like to increase this. We have a toddler who is quite a good eater but not mad about spicy food. I'd really love some veggie ideas that don't take ages to cook that are loved by all your family. Things I do already: vegetable wraps/fajitas, lentil bolognese/lasagne, pasta with various veg and sauces.
