What to do with all this soaked, dried fruit?

I soaked a load of dried fruit in booze (I think brandy) in preparation for making a Christmas cake. Events somewhat overtook me and the cake didn't get made. The fruit is still in its Tupperware and is useable. I don't really fancy Christmas cake now - what else could I do with it?

It's common to do this in some Caribbean cultures, the alcohol will preserve the fruit indefinitely. The dried fruit can be soaked in alcohol for months or years, and then blended to a paste to use in 'black' fruit cake for weddings and celebrations.

Mix in with icecream. I seem to recall an Italian flavour called cassata that has dried fruit in it, and surely boozy fruit would make it even better? Here is one version that uses fruit soaked in amaretto www.annabel-langbein.com/recipes/cassata/24

Make the cake and feed it monthly until next christmas, or make xmas pudding and do the same.

Good suggestions. I didn't know it could hang around for a year. Maybe I'll make it into mincemeat did next Christmas. Smile
