Slice very thinly (sharp knife or mandolin.)
Dress with vinaigrette and good squeeze of orange juice and olives.
Allow to marinade for maybe half an hour before serving.

Nothing - it is horrible stuff. You might be able to do something interesting with it, but not yummy.

Delia has a recipe for roasted red peppers stuffed with fennel, in her vegetarian collection. Not that I have ever made it, as I hate the stuff.

easy option: roast in olive oil and then dress with lemon juice

more complicated: slice very finely, add clove of garlic chopped, zest of half a lemon, juice of half a lemon, tiny bit of sliced chilli (optional), loads of olive oil and roast for 20 mins covered in foil, take foil off and roast until done (5- 10 min or so, depending on oven). use as sauce for pasta.

Fennel risotto is absolutely devine, especially on a misty autumnal night!

I can't find the recipe but it's in Jamie Oliver's Taste of Italy cook book. Highly recommended.
