Fresh beetroot - Any recipe ideas very much appreciated!

Two fresh beetroots in the veg delivery box and I'm clueless about how to cook it!!!

Boil until tender. It then makes it easier to peel the skin off.
Just keep in the fridge and eat.

Careful though as they do bleed alot in the pan.

It's absolutely lovely grated in a salad - no cooking required.

Or you can grate it and stir-fry it.

Or you can grate it, mix it with other grated root veg (and a bit of flour, and some egg, and some grated onion) and make latkes.

Boil them until tender (point of sharp knife will tell)
Leave to cool then peel.(Skin will slide off.)
Slice thinly and arrange on plate.Dress with vinaigrette and fresh mint.
Crumble fetta and walnuts over the top.
Fab with grilled lamb and some bread.

Have a friend who wraps them in goil and roasts them. Never done it mayself like
