QUICK AND EASY RECIPE FOR GINGERBREAD MEN ( and WOMEN)

Looking for a really easy recipe, ingredients and method please, for making gingerbread men, have a school sale coming up and think these would sell well. Cheers...

This one always works well for me, the dough freezes well and defrosts quickly aswell. Kiddies and Adults cant get enough of them:
Gingerbread men/women or dogs!!

12oz (350g) plain flour
1 teaspoon bicarbonate of soda
2 teaspoons ground ginger
4oz (100g) margarine
6oz (175g) light muscovado sugar
4 tablespoon Golden Syrup
1 egg, beaten
Currants to decorate

Preheat over to gas mark 5. Lightly grease 3 baking trays.
Measure the flour, bicarbonate and ginger into a bowl. Rub in the margarine until it resembles fine breadcrumbs, then stir in the sugar. Add the syrup and beaten egg to the flour mixture and mix to form smooth dough, kneading lightly with the hands towards the end.

(I personally find it easier to handle if its has been chilled in the fridge for a 30 mins)

Roll out the dough (half at a time) on a lightly floured surface to a thickness of about 1/4 inch.
Cut out using a gingerbread man cutter and place on the prepared baking trays. Use currants for eyes and buttons.

Bake in the preheated oven for about 10 -15 minutes until a slightly darker shade. Cool slightly then lift on to a wire rack and leave to cool completely.
