Does anyone have a decent sugar/sweetener/honey free gluten free cake recipe?

For me for my birthday next month. I'm gluten free and also don't eat anything with added sugar or sweetener. I try to avoid things sweetened with honey etc too. Maybe a banana bread type of recipe (doesn't have to be that sweet, just something as similar as I can get). I can have fresh fruit and a little dried fruit.

I like this recipe. I always make it without the stevia, you could try making it without the honey too, but I would add a little juice or water as substitute.

I found it for the first time at Costco. It was strange to work with as it absorbs loads of liquid. It has a lovely coconut flavour that goes really well with the banana. I hope you enjoy it, if you try it out. My daughter loves it as well.

I can imagine it gives a lovely flavour, and isn't all dry like regular gluten free flour. Right, I'm going on a coconut flour hunt Grin
