I am looking for recipe for traditional American buttermilk pancakes, any MNer's out there have one they would like to share???

5oz/150g plain flour
1/2 tsp baking powder
4 floz/120ml buttermilk
3 floz/75ml water
3 large eggs beaten
fat to fry

To serve: maple syrup and some of the buttermilk.

Seive dry ingredients into large bowl and make a well in centre. whisk water and butter milk together. Add slowly to flour and whisk. Then add egg little at a time till have smoothe batter.

Fry in hot frying pan. Delia says use lard but i use ordinary oil but you do need quite a bit. Is like pancakes, the first ones are never as good till you get the temp right. Use kitchen paper to dab off the grease and serve with maple syrup and some more of the butter milk. YUMMY but a million calories!

This is how my Mom & Grandmother and now I make them
1 egg
1 cup / 115g plain flour
3/4 cup / 200 ml milk
1 TBl sugar
2 Tbl vegetable oil
3 tsp baking powder
1/2 tsp salk

Mix all together until smoth.

Blueberry: add 1/2 cup / 75 g blueberries

buttermilk: replace milk with 250 ml buttermilk.

I use very little oil to cook mine, but on a castiron griddle. It needs to be HOT ! Water dancing on it hot.

I have a recipe for Gingerbread Pancakees as well if you are interested YUMMY !
