Gammon in coke but no skin/fat?

Sent dh to get meat for tonight's dinner and he's come back with gammon joint but had skin and fat taken off. Was planning on doing nigellas gammon in coke but that says to leave fat and skin on. Can I still do it? Will it be dry or less tasty? Would you still do the cloves/treacle on top?

I think you can still do it. The fat gets taken off after the boiling bit, and it's a horrible soggy mess by then. Maybe spoon liquid over it frequently so it doesn't dry out, but I'd still do,it.
