Roast Duck - how to?, whats best with duck etc

I bought a whole duck the other day as it was on special offer, but have never cooked a duck before.

Any tips on roasting duck and whats the best things to go with Roast Duck please?

People always do orange with duck but a good one which Delia suggests is Duck with Morello Cherry sauce. Make sure the duck is perfectly dry before putting it in the oven - this makes the skin crisp. Prick all over to let out the fat and sit it on either crumpled foil in a roasting tin or on a roasting rack. Tip out the fat every now and again during cooking. She suggests making the sauce in the roasting tin after the cooked duck and skimmed fat has been removed but when I did it I just made the sauce in a saucepan. I put in morello cherry jam, dried sour cherries, red wine and black pepper. The full recipe is in her Winter Collection book anyway and she does have her own website so you could probably find it on there.
