OK so you are coming to my house for dinner and you are the only vegetarian. The host is going to serve a lovely roast dinner. You absolutely hate cheese. What would be the nicest dish your host could serve you which would go along with the roast potatoes and vegetables etc. If you have such a lovely dish could you also let me have the recipe.

Nut roast or a vegetable pasty would be good.

My nut roast receipe.

1 onion
225g mixed can of beans
100g chopped mixed nuts
100g cheddar cheese
2 eggs, beaten
1tsp marmite
1/2 tsp chopped maroram
1/2 tsp chopped sage

Chop onion and fry for 4 mins, until softened.
Mash the beans in a bowl with a potato masher, add the onions into the bowl.
Add all other ingredients
Place the mixture in a greased 1lb loaf tin and bake at 190c for 30mins.

Very easy and quick to do, you can make the evening before and put in the fridge before cooking it. Then cook it on the evening. Use fresh herbs if poss. Takes 15mins to prepare (if you have a electric nut chopper).

Hubby is vegetarian and I think if we went to someone's house and they hadn't done anything for him or even just put him a Linda Mccartney burger in then he would be a bit disappointed. But then he can't stand pre-prepared/packed veggie food. A friend of ours is celiac and when he comes for dinner I make a big effort to make him food he can eat, even make wheat free bread for him.

my favourite nut roast "recipe" is: buy Cauldron foods "Tomato, courgette and nut roast". pop in microwave or oven. It's really good.

another favourite veggie thing which might go with roast veg is. sheet of filo pastry. wrap around lightly roasted veg with a bit of olive oil, herbs, pepper, and feta cheese. Vary with spinach (or perhaps kale, see currently running Kale thread) and feta cheese. pop in oven for 10 minutes.

I'm a vegetarian and when I do the weekly roast I rarely have anything other than the potatoes, veg, yorkshire pudding and stuffing (sage and onion cooked separately). I do like the linda mcartney sausages and have those with it sometimes or the quorn nugget style things are also quite nice. Make sure the gravy is vegetarian as well as not all of them are. I always roast my potatoes in vegetarian butter and they come out lovely.
