red onions best

cut them up 70% into slices, 30% small dice. cook v, v, slowly in a mixture of butter and oil til acramelised. you can add a bit of sugar to speed up if you need (or you could do tons and freeze), add wine and cook alc off, then stock. pref a mixture of beef and chicken. season. herbs - thyme is best, i think.
