Anyone got a simple tasty recipe with pumpkin in it?

We're not overly fussed with pumpkin, but it seems a shame to waste the middle after we've carved out the pumpkin. As the title says, does anyone have any simple tasty ideas so I can use it up, please!

I just use it in the same way I would a butternut squash, so stews & risotto mainly.

I did make pumpkin puree last year, to do cakes with, but it's a lot of effort.

I never think it is worth the effort. It only tastes of the things you put in to give it flavour!

A bit fiddly but really nice, cook some lasagne sheets, fill with pumpkin puree, feta/mozzeralla and spinach, then roll them up, cut in half and stand them upright in a dish which you have added a tomato pasta sauce... Bake in the oven. Think this was a Jamie Oliver recipe it is blooming lovely!
