Your bestest butternut squash soup recipes please!!

Got some foodie folks over for dinner this weekend and as I'd like to prepare a fuss-free-prepare-in-advance starter, I'm going to do soup.

I'm a big fan of butternut squash, and with it being the right season it seems apt to use it.

I can make butternut squash soup easily enough, and often will make it with ginger or chilli etc.... But because of my rather foodie guests, I'd like to do something just a little bit 'wow' and different.

Any suggestions? Smile

I used to make a soup with butternut, carrot, sweetcorn, garlic & ginger: boil it up, puree and then sieve because the corn bits don't fully mush. Serve with some slightly toasted sweetcorn bits. Twas heavenly, although the sieving was a royal PITA.

Also, buttrnut, carrot and coriander soup is very tasty.

Add a tin of coconut milk, a load of garlic, onion, chilli, ginger, squeeze of lime maybe and some lemongrass (and I squeeze of umami paste if you can get it, they have it in Waitrose) and you have Thai spiced soup!

I normally just lob a bit of sherry in at the end if I want to make it fancy, or a bit of creme fraiche if the kids are eating it too. I guess that's not exactly gourmet though, eh?

I suppose you could roast it with harissa and then make a soup out of that. Bit of creme fraiche to finish.

Also, butternut squash goes really well with sage, you could then top with a few small pieces of mild blue cheese.

Um. I love the stuff. I'm sure I could think of some other things to do.

I also add a chicken oxo cube or posh stock and blend it all once it's boiled for a while. Oh, and two sweet potatoes as well. Cook garlic and onion in coconut oil first then add yet rest and cover with boiling water, then when squash is cooked blend then stir through coconut milk.

Sweet potato and butternut. Not exactly "wow" but has a lovely delicate taste - my family love it.

Fried onion, cinnamon, vegetable stock, sweet potatoes and butternut squash. Add a bit of creme fraiche after whizzing.

Butternut squash, sweet potato, red lentils, equal quantities. Bung in a pan with an onion and 2 knorr veg stock pots.

Wow. Thank you all. Every one of your recipes sounds tempting. Like the idea of coconut/Thai and also thyme/blue cheese.

buttnut works well with toasted cumin seeds also - cook off some sweet onions with cumin seeds, add chunks of butternut and some potato, plus stock, blitz when cooked.
