If I'm honest when rushed ( like tonight) I feel baked beans or scrambled eggs on toast is healthy enough for us and takes a few minutes tops to make.
But proper healthy family meals would be stuff that can be prepped and put in the oven and ignored until cooked
Baked chicken thighs with new potatoes, chorizo and re peppers- chop it all into nice sized chunks and roast for forty or so minutes.
Ratatouille with sausages - again just shove your ratatouille( courgette, aubergine, onion, garlic, peppers, and a tin of toms) and sausages in the oven until cooked
Cherry tomato and goat cheese pastry pizza- lay a ready rolled pastry sheet on baking tray, top with halved cherry tomatoes, some asparagus and goats cheese- bake for 15 minutes and cut into 4.
Baked risotto - not a real risotto I know, but it's quick and delicious and can be ignored for twenty minutes
Hob based meals would be-
Frittata / omelettes
Stir fries- with whatever veg , a beaten egg and noodles.
Country veg soup- roughly chop leftover veg, herbs and stock- leave to simmer for half an hour and blend.
My other stand by would be my slow cooker. - which IMO is brilliant, but it's not for everyone
