They always come out soggy when I oven cook which I do prefer but when I've had in restaurants they always more like potato wedges and firm on outside and soft In inside.
Clearly this is important Wink

I find that dusting them with polenta helps get a better crust but they're still not as good as the ones in Wahaca.

Yes to polenta but also add paprika - not for crispiness but for taste. Yum.
