I had an amazing vegan dish the other day -thai noodles with tofu.It was heaven.

I've never cooked with tofu and just don't know where to start.

Any pointers/easy recipes (ideally vegan) gratefully recieved!

Marinated tofu is a better option as it isn't soft and gelatinous.

I cut it into slices, marinade it in soya sauce, ginger and chinese 5 spice then griddle it. Serve with stir fried veggies and noodles.

Holland and Barrett do a brand called Dragonfly and they do a marinaded tofu (in a good and black packet). It's sort off ginger/black pepper/soy saucey and it's delicious, very firm and perfect in stir Fry's, and pretty much any dish. Is already firm all the way through before you ever start cooking it, and it crisps up really nicely if you lightly fry it.

Yes, dragonfly is good. Cauldren is ok and I found some nice ones in our local asian supermarket.

Don't get the tetrapack ones on the shelves - ok for cooking cake but not grilling/roasting/frying etc.

pockledigg I press then freeze, then on removal from the feezer can defrost and dump in mainiade. Agree it makes the texture better.
