we are not vegetarian but i love vegetarian food and so do the dd's and dh

we also love fish

but i need some more ideas

nice and easy, not too many ingredients or ones that require food mixers etc would be very lovely

We love veg chilli ( very mild for the kids) made with veggie mince, then wrapped in tortilla wraps, covered with grated chees, then grilled, is yummy and v easy and looks complicated! Also, kids love smoked mackerel, mashed up with cooked potatoes, carrots, peas whatever, then fried in a bit of olive oil so it is crispy. Also feel very smug that children eating lots of omega oils etc, and v cheap too!

Nailpolish-a good standby I use which is quick and easy is a ratatouille bake

2 tins of ratatouille
penne pasta
breadcrumbs
grated cheese

Cook pasta,mix with ratatouille.
put in a pyrex dish,sprinkle on breadcrumbs and cheese
bake approx 25 mins at 200
brown under grill for a few minutes

salmon and butterbean mash

salmon fillets x2
honey 2 tbsps
grain mustard 1 tesp
little oil
can butterbeans
watercress
butter
garlic 1 or 2 cloves depending on taste
black pepper
1 lime

Mix oil,mustard ,honey lime juice and zest,pour over salmon and grill 6-8 mins depending on thickness of salmon.Use a deep dish to collect juices.
meanwhile

Melt butter,add garlic ,add butterbeans,cook few mins.Mash a little leaving some beans whole ,then stir in watercress and black pepper.

Serve salmon on bean mash,pour over any juice over the top.

Cheesy pasta - homemade cheese sauce thrown over osme psta with some peas/sweetcorn thrown in for good measure

Pasta carbonara - made with Quorn ham and cheddar instead of parmesan. Yummy!!

I love salads with grilled halloumi, olives, capers and good tomatoes, with flat breads to wrap it up in and a dressing of: yogurt with finely chopped herbs (whatever is cheap at the market - i guess mint would be classic but either parsley or coriander work well).

ciabbatta, cut lengthways,

slap some pesto on it

slap some tinned sardines with tomato sauce on that

top with roasted veg and shavings of parmesan -truly delicious

Baked cheese and tomato macaroni

macaroni
grated cheese
grated parmesaen
breadcrumbs
basil butter

sauce

1 tbsp oil
1 shallot
2 cloves garlic
can tomatoes
1 tbsp basil
salt and pepper

sauce
heat oil,saute garlic and shallot add tomatoes ,basil and seasoning.cook 10 mins

meanwhile cook pasta,
grease an ovenproof dish,
put in a third of tomato sauce ,third of macaroni,then third of the cheeses.
repeat layers twice.
combine breadcrumbs and basil sprinkle over the top.dot with butter and cook at 190 for 25 mins until browned.

I use a mix of the following:- mushrooms, chopped onion, sliced aubergine, sliced courgette and sliced peppers. Sprinkle with pumpkin seeds and drizzle olive oil. Stick on top shelf of oven at 200 degrees until a bit charred. Take out and drizzle with some balsamic vinegar.

And if you're not keen on sardines, at this point, you could mix a tin or tuna in with it.

Chop up veg, whatever you fancy really. we have courgette, peppers and tomatoes. Also aubergines.

Put in tin, pour over oil.

Add herbs if you like, we use rosemary sometimes. Or just salt and pepper.

Bake for 30-40 mins, depending on how ell done you want hem.

Nice with couscous too.
Or use them in a spanish type omelette.
