grown up sides for salmon fishcakes

folks coming over for dinner, have some posh fishcakes I made and popped in the freezer so thought I'd do them (salmon, sweet potato and lentil)...what would you do as side dish? They're not heavily skewed in flavour so I could go thai route or something fresher...

FYI we live in California so easy access to fresh fruit and veg. Was thinking maybe a quinoa and pomegranate salad then something green - green beans in garlic or with bacon, or some posh peas side dish - or should I do something more crunchy to balance out the textures? I have lots of avocadoes that could do with being eaten but could use them for a starter?

I'd go for buttered and wilted spinach. That's my favourite 'side' to fish cakes. However it's past 3 in the morning here, and I'm struggling to get my culinary inspiration going!
I loved, loved California when I was out there. The only place in the US I think I'd live. :)

Yeah it's alright Wink I love wilted spinach so that's a def probability

Except I've just found out that one if the guests is veggie so now no fish cakes

Still serve the fishcakes but make Arancini for the veggie and do an Asian Slaw side plus the fine green beans. I fancy that myself now Smile

Noodles and stir fry veg. Easy for your veggie too - just give them a larger portion!
