Something different with sausages?

Money has been tight the last few months and sausages have featured heavily for us lately as a cheap meal and will do for the forseeable future.
Have just found six lurking at the back of the fridge...which is great, they will easily make a dinner tomorrow....but what to do with them?
If I see another plate of sausage, beans and mash I will cry :(
I usually do a kind of sauasge & tomato pasta bake kinda thing as an alternative but DH is not a huge fan of pasta and is sick of this too!
Any ideas? Only me, DH and DD (4) to feed and we all eat pretty much anything :) Thanks for suggestions!

Sausage and roasted veg

Brown sausages first, chuck into a deep oven tray and add any combination of onions/shallots, peppers, courgettes, aubergine, cauliflower, leeks, potatoes/new potatoes

If you like, add a handful of garlic cloves (no need to peel) and some chopped chillies.

Lots of olive oil, sea salt and black pepper. Roast for about 40 mins till nicely charred.

Use the meat in them to make a sausage curry. Fry onions, then fry the sausage meat rolled into small balls, throw in any other veg such as mushrooms, peppers etc. Add some curry powder, chopped chillies or other Indian spices then a can of tomatoes. Let it bubbly away for abit and serve with rice.

I do a Gizzi Erskine dish which is autumnal and very simple. Brown sausages off in a pan before putting in a roasting dish (drizzled with oil) along with chunks of butternut squash, red onion wedges and cherry tomatoes, herbs and seasoning etc. Roast in hot oven until everything is cooked. Really quick and tasty.

Her sausagemeat and apple Wellington recipe is amazing and if you mixed minced pork with some sausagemeat am sure it would work just as well.

In a casserole with peppers onion garlic, tinned tomatoes, herbs and stock (and a glug of wine if you can spare it)

I was just coming to suggest the Nigel Slater one, it's yummy.

Splash out in some supermarket posh sausages, when they are on offer and then economise by using Elmlee for the cream.

Skinning them gets round the sausages again problem that multi buy offers cause.

I do a casserole with lots of redcurrant jelly and red wine. Makes it seem all grown up but the kids still pick out the sausages. Serve with much mash and red cabbage.

Serve with champ and homemade spicy apple sauce. Split then add herbs, breadcrumb and egg, firm into meatballs and serve with a tomato sauce.

I like to do breakfast-for-dinner sometimes - sausage, egg, bacon, tomatoes. Feels weirdly indulgent!
