low fat slow cooker recipes - is it possible?

about to lose oven and hob due to building works. will be left with microwave and slow cooker.

most of my successful slow cooked food has involved meat with fat.

but due to a health scare for dh I need everything to be low fat, and low salt, but hopefully not low flavour Confused

any ideas?

Try beef and barley:

stewing steak with peeled shallots or leeks (or quartered red onions at a push), peeled carrots cut into chunks, a mug of barley, 2 mugs of beef stock, 1 of wine, some herbs of your choice. Serve with broccoli steamed in microwave.

Chicken with ginger and lemongrass:

Chopped chicken breast in clear chicken stock with sliced slivers of red chilli, garlic and ginger, chopped spring onion and crushed lemon grass or chopped lemon verbena or lemon zest. Pinch of 5 spice if you have some. Add chopped green beans and peas or soya beans, julienne carrots plus quick cook noodles towards the end.

Buy the 'Skinny slow cooker' books, the recipes are great, low fat, and only use low fat cooking spray when needed.

The recipes are easy to follow/do, one being 'fall off the bone whole chicken' which you put on for a few hours on the low setting, amongst others. I re-refer to it regularly Smile
