How Do You Bake a Cake with Fruit Curd Seperate in the Mix?

I recently had cake in a tea room that was orange and chocolate marbled sponge, but near the top it had a layer of orange curd.

The curd seemed to have been baked in the cake, not put between the layers.

It was a thick layer of gooey orange heaven.........but how did they get it in there?

Can anyone reveal the mystery please?

Is it put in afterwards before icing? There's probably some gadget available for cutting out the centre of a cake that makes it all easy.

A bit like those small cakes that have some of the centre scooped out, filled with lemon curd and then covered with Italian meringue and blow-torched.

Don't you freeze the curd or something (ignore me I don't really know, just like watching Bake Off).
