Cut spuds into appropriate shape, put on a tray (I cover it in baking parchment so they don't stick) spray with oil (or put in a plastic tub with a teaspoon or so of oil and shake until they're all coated), put in hot oven for about 25 mins.

can add some paprika if you like them spicy and can use olive oil too...

I don't do very chunky chips or wedges. Chips about 1.5cm thick (ish)

dh followed a Jamie Oliver recipe and they were FANTASTIC (I don't even much like chips) Peeled and cut large potatoes into biggish chips. Parboiled for about 10 minutes. Tossed in hot olive oil with whole garlic cloves. Sprinkled on black pepper and baked in oven for about 20 mins, I think. Absolutely brilliant! I made him do them 2 days in a row.

that how i thought i should make them. to late now ive put in oven without par boiling them, ill have to see how they work out

I never parboil my home made potato wedges.

I just scrub potatoes then cut into wedges (not too thick) then dry them off on kitchen roll. Put into a large bowl and add 1-2 tablespoons of olive oil (depending how many you are making) and then I sprinkle with cajun spices and give it all a good mix. Place them on a HOT baking tray and cook at gas mark 6 for about 40 mins, turning half way through.
They are lovely.

ok made two sorts! one thin chips spayed with oil and put black pepper on, second lot cut in to wedges, put a little oil in try and put paprika on, and ds loves them both.
thank you all just wait to see if dh like them hes so funny with food
